Friday Five!

Happy Friday everyone! I hope you had a lovely week. I had another very full week. (Full as in ‘busy’ and full as in feelings!) There is so much to do before the move to Boston, and I am trying to both figure all that out and also stay present. It’s a tough balance! But I’ve still managed to carve out a lot of space for lots of summer.

Chia Seed Jams

Coming Home to Roost created a wonderful how-to guide for canning your own chia seed jam. Including strawberry lemon jam and blueberry vanilla jam. These look so amazing, and they are free of refined-sugar! Must make.

Yeah, just what the title says. Bad ass, right? And they were all ladies! Woot!

Zucchini Corn Fritters with Dill Cashew Sour Cream

Not surprisingly, Ricki has done something amazing again with her zucchini corn fritters. I love that these are so veg-packed, and the “breading” consists of garbanzo bean flour and gluten-free natural corn flakes. What a fun food project to make!

Enjoying a break from cooking with lots of raw food.

Finding out that the yoga program I started at the jail has inspired some of the staff to work on doing yoga programs in schools where many of the students end up in prison.

    Thank you so much for including my fritters in this great roundup! I made them as minis for a potluck and they went. . . FAST. ;-) And I also love chia jams! I used to call it “fruit chia pudding” but I think it’s more like jam, LOL! Have a lovely weekend, Raechel! :)

    Those zucchini corn fritters are calling out to me. And I love that last item on your happy list- you started a yoga program at a jail? That’s so kick ass!
    This week, I’m loving garden fresh cucumber and summer squash, gorging on Mexican food with friends, and jogging in the rain :)

      Yes, I’ve been doing yoga at the jail for a year, it’s great. Mmm, fresh cucumber and squash, Mexican food, and rain jogging all sound wonderful!
