Simple Mint & Arugula Salad with Radishes

This salad tastes like summer.

Simple Mint & Arugula Salad with Radishes

3/4 bag of organic arugula (about 3 1/2 cups)

4 small radish bulbs

small handful of mint leaves

1 T olive oil

squeeze of 1/4 lemon

salt and pepper to taste

Place arugula in a large salad bowl. Chop radishes in thin slices (save the greens!). Thinly slice your mint leaves. Place radishes and mint in the bowl with arugula. Drizzle with olive oil, squeeze lemon. Add salt and pepper. Mix thoroughly so that everything is coated.

I served this with baked falafael balls from Appetite for Reduction. It was a truly stellar combination.

I saved my radish greens and added them to my dinner salad the next night. They were superb, so I highly recommend saving those!

    Haha this post made me giggle! I have a few mint plants that are getting out of control (there’s only so much mint tea a girl can drink) and I was thinking of shoving some in a salad; I think this recipe may just be the way forward. Also, adore the new design, totally charming! xx
