Strawberries n’ Cream Quinoa Porridge


Thank you all for the kind words of congratulations! As I mentioned, I still have one more hurdle to get through before I’m officially “Dr.”, but I had a wonderful weekend celebrating the graduation ceremony with my family.

Some unexpected news also made this weekend and upcoming week especially busy (will explain in an upcoming post, I promise!), so I’m going to keep this short.

I made this recipe last week when I was in need of brain food and balance. My fruit and veggie smoothies and juices are great, but I need protein and fats in addition to carbs to keep me fueled through the last month of dissertation work. This breakfast was my first foray into the world of quinoa flakes, and I was delighted with the result.

Even more exciting? The strawberries I bought were delicious which totally makes me believe that summer is almost here!

Strawberries n’ Cream Quinoa Porridge

1/4 c quinoa flakes

2 T buckwheat groats

1/2 c water or vanilla almond milk (or mix of both)

1 T ground flax seed

1 t vanilla or a few drops vanilla stevia

1/2 t cinnamon

1/2 banana, mashed

4 strawberries, chopped

more liquid as desired

Put all ingredients except the fruit in a small pot over medium heat. Stir until porridge starts to thicken. Turn heat to low and let simmer, adding more liquid as desired.

Mash your banana into a cream/paste. Chop strawberries.

Remove porridge from heat, place in a small bowl (cute bowl preferred ;)), add your fruit.


Sweet, proteiny, filling, and, let’s be real: adorable.

    I guess I’ve missed some important changes and I’m late to it – but congratulations on graduating! I know you’ve been working really hard. This is a pretty cute way to celebrate. I’m big on strawberries :)
