Apple Cinnamon Buckwheat Granola

I created this (mostly) raw apple cinnamon buckwheat granola last week when I was craving some texture in my morning smoothie. It was super easy to make, and the result was lovely. A crunchy, naturally sweet snack with brilliant pops of apple, and a hint of spicy ginger.

Here’s what you’ll need:

Apple Cinnamon Buckwheat Granola

1.5 c buckwheat, soaked at least 8 hours

1/4 c applesauce

1-2 T almond butter

1 T cinnamon

1 t ginger

1 red apple, chopped

Soak then rinse your buckwheat. Put buckwheat in a bowl, then mix in the remaining ingredients. Dehydrate for 10 hours at 115 degrees. If you want it to be totally raw, sub applesauce with your favorite raw applesauce version. If you don’t mind it being cooked, feel free to skip the dehydrator and bake it in the oven at the lowest temperature for a few hours; time will vary depending on oven.

This was an amazing topping to my ginger berry smoothie!

I’m submitting this recipe to Raw Foods ThursdayWellness Weekend and Healthy Vegan Friday!

Do you like adding things to your smoothie? What’s your favorite add-in?

Yummers! I love making different kinds of granola for my smoothies and such. I already have some in the dehydrator right now, but I’ll make this one next. Glad you’re feeling better! XO

apples, ginger and cinnamon – 3 amazing things, made even more amazing when combined :) I have yet to experiment with the idea of dehydrating – maybe this will be the first thing I try!

Isn’t that the worst part of blog-reading? It’s like “This looks amazing, I want it in my belly NOW!…Oh wait, I can’t eat the computer screen, guess I’ll have to wait.”
