Raw Raspberry & Chocolate Tart


My mom and I made this beauty when she was in town last weekend. It’s pretty similar to a lot of raw treats floating about the interwebs, but the filling for this is less nut-heavy, and more fruit-filled. As with most raw desserts, you can play around with the ratios. If you’re looking to go totally nut free, maybe try subbing buckwheat for almonds. Or if you want to change up the fruit flavor, switch raspberries for cherries. The possibilities are endless!

If you do decide to stick to this recipe, I promise you won’t be disappointed. It is as delicious as it is beautiful!


Raw Raspberry & Chocolate Tart


1 c almonds (or any mix of nuts you like)

10 dates

2 T cacao powder

1 t vanilla extract

pinch sea salt

Blend everything in a food processor until crumbly dough forms. press into a spring form pan (or any pan of your choice).


1/4 c cashews, soaked

2 heaping cups frozen strawberries

1/2 large ripe banana

1 T coconut oil, melted

stevia to taste (optional)

Blend everything in a high speed blender, adding the melted coconut oil as it blends. Pour filling over crust.

.Chocolate Shell.

1 85% or higher dark chocolate bar, chopped

1-2 tsp almond milk

1 tsp coconut oil

stevia to taste (optional)

Melt all ingredients in a small pan over low heat, stirring consistently until liquid. Pour chocolate sauce over the filling.

Freeze the tart for at least an hour. Serve and enjoy!


We enjoyed this over a game of Scrabble. Mom and I lost brutally to Mike, and I was a really sore loser but we still had fun. We also shared the rest of it with friends who came over to watch the Oscars. Everyone deemed it red carpet-worthy! (Okay, no one said that, but I’m a nerd so I’m turning their positive feedback into a dorky theme-appropriate reply. That’s just how I roll).

    Awww…I love cooking with my mom—we do cookies every year before Christmas. I’m a good sport about losing but an ex boyfriend’s mom brought me to tears during a scrabble game once. Obviously, it was about way more than scrabble…

    I love this! I am looking to lower my nut intake a little (it’s getting out of control!) so I love this idea of a raw cake that’s a little less nut-heavy.

      Even just cutting back a little helps, I think. The crust is obviously still full of them, but it’s nice that it’s not entirely cashews, ya know?
