Here’s something that will shock you: I am not exactly “patriotic.” Are you floored that my Left-leaning political disposition precludes me from proudly waving the American flag and joining “USA, USA!” chants? (With the exception of every time I watch The Mighty Ducks). I know, I know, it’s crazy.
But here’s the thing. I LOVE the 4th of July! Not because I think “America is #1”, but because it allows me to be “theme-y.” Which, if you know me in real life or have read the blog at all, you probably know is, like, one of my favorite things ever. I get to wear cute red, white, and blue things! And bake pie! And listen to “Born in the USA” on repeat, (because if there’s anyone who can take a song that seems patriotic and turn it into a scathing critique of the American war machine, it’s Bruce Springsteen)! Oh, and FIREWORKS! So cute!
This year, part of my patriotic pastiche involved creating a red, white, and blue breakfast recipe. A delicious, healthy, protein-packed muffin with sweet blue and red berries. And the berries kind of explode in the muffin like fireworks! THEME-WIN!!!
This is super simple, but will take 25-30 minutes with prep and bake time, so make sure you start before you’re too hungry!
Berry Firework Protein Muffin
4 T protein powder (I use Garden of Life RAW protein)
1 T gf oat flour
1 t flax seed
1/2 t baking soda
1/2 t vanilla
1/2 very ripe banana, mashed
1 T almond milk
handful of blueberries and chopped strawberries
Preheat oven to 375 degrees. Whisk all of your dry ingredients in a small bowl. Add your smashed banana, almond milk and vanilla, and stir into a smooth batter. Add your berries. Spray a muffin tin or small ramekin with cooking spray (I used coconut oil spray). Pour batter in trays. Should make 1-2 large muffins in ramekin, 2-3 smaller muffins in muffin tin. Bake for 20 minutes.
