Happy Monday! How was your weekend? Mine was….yoga-y. Friday and Sunday are filled with teacher training and also yoga classes. Not a bad way to spend a Friday and a Sunday, if you ask me! My day off on Saturday was really lovely. A leisurely morning workout, followed by a trip to the farmer’s market with Mike:

….some back porch reading, and the evening culminated with a friend’s birthday party.
We got some amazing greens at the farmer’s market, and I decided to use them to perfect a recipe I made a few weeks ago when a friend and I had a Girls viewing party night. (Does anyone watch that show? I have so many opinions about it; shocking, I know).
The perfect accompaniment to a summer viewing party is a tried and true dip. No silverware required, just crudites or brown rice chips and a bowl of blended goodness. I had a can of artichokes and of course, my refrigerator was full of greens, so I decided to get creative. The result was a delicious “cheesy” spinach artichoke dip, created in under ten minutes.
Spinach & Artichoke Dip
2 c baby spinach
1 clove garlic (chopped)
1 T olive oil
1 can artichokes
1-2 T nutritional yeast
pinch salt; pinch cayenne
Saute your greens, olive oil, and garlic, in a pan over medium heat, until greens are wilted. Drain your can of artichokes, and dump them in a food processor. Add your spinach to the food processor, then add your nutritional yeast, and remaining spices. Process until smooth. Add oil if you desire a thinner consistency.
Serve with veggies or your choice of healthy chip (I love toasting Food For Life Brown Rice Tortillas!).
