Weekend Recap + Spinach & Artichoke Dip

Happy Monday! How was your weekend? Mine was….yoga-y. Friday and Sunday are filled with teacher training and also yoga classes. Not a bad way to spend a Friday and a Sunday, if you ask me! My day off on Saturday was really lovely. A leisurely morning workout, followed by a trip to the farmer’s market with Mike:

Then brunch at Tao……

….some back porch reading, and the evening culminated with a friend’s birthday party.

We got some amazing greens at the farmer’s market, and I decided to use them to perfect a recipe I made a few weeks ago when a friend and I had a Girls viewing party night. (Does anyone watch that show? I have so many opinions about it; shocking, I know).

The perfect accompaniment to a summer viewing party is a tried and true dip. No silverware required, just crudites or brown rice chips and a bowl of blended goodness. I had a can of artichokes and of course, my refrigerator was full of greens, so I decided to get creative. The result was a delicious “cheesy” spinach artichoke dip, created in under ten minutes.

Spinach & Artichoke Dip

2 c baby spinach

1 clove garlic (chopped)

1 T olive oil

1 can artichokes

1-2 T nutritional yeast

pinch salt; pinch cayenne

Saute your greens, olive oil, and garlic, in a pan over medium heat, until greens are wilted. Drain your can of artichokes, and dump them in a food processor. Add your spinach to the food processor, then add your nutritional yeast, and remaining spices. Process until smooth. Add oil if you desire a thinner consistency.

Serve with veggies or your choice of healthy chip (I love toasting Food For Life Brown Rice Tortillas!).

How was your weekend? Do you watch Girls? Do you go to the Farmer’s Market in your city? Tell me, tell me!

Yoga + farmers market perusing sounds like the perfect weekend! I love the idea of a “Cheesey” artichoke dip…. sounds delicious. I haven’t seen “Girls” – is it worth a watch?

I have mixed feelings about the show. In many ways, it’s totally obnoxious: just a showcase of privileged white girls with “first world problems.” But there are these moments that I feel like some really poignant things happen, and I just relate in some pretty heavy ways. Sooo…a mixed bag! Let me know what you think if you watch it. : )

Sounds like a great weekend! That dip looks fantastic too.

I don’t have tv (or the time to watch it), but I’m told I’d have a lot to say about Girls—positive and negative. As an undergrad in my past life, I did a lot of research and writing about female promiscuity and on women writing about sex. Maybe one of these days I’ll get around to watching it.

Oh cool undergrad research topic! Yeah, I’d be curious to see what you thought if you ever find the time! : ) It helps to make tv watching a social thing, so you’re sort of killing two birds with one stone.

:) So glad you appreciate that! I have to say Nutritional Yeast really saves the day…gives that “cheesy” taste with none of the bad stuff! : )
