2-Ingreident Grapefruit Balsamic Dressing + Avocado, Blueberry, & Sprouts Spring Salad

On to the recipe! I’m stoked to share this with you because I know many of us are busy and prefer simple recipes to complicated ones. Even better is when those recipes have very few ingredients. This salad dressing is up for the challenge: two ingredients, super simple.

All you need is a grape fruit, and white balsamic vinegar.

And put them together. I used the juice (just squeezed, not from my juicer) from 1/2 grapefruit, and added a scant teaspoon of balsamic. Swirled it around a bit and poured it on this delicious salad creation.

Avocado, Blueberry, & Sprouts Spring Salad

1-2 c baby greens (I use baby spinach, kale, and chard)

1/4 avocado, chopped into bite-size pieces

1/2 c sprouts

1/2 c blueberries

Put all of this in a bowl and dress it with the grapefruit salad dressing.

Grapefruit Balsamic Dressing

juice squeezed from 1/2 grapefruit

1 tsp (scant) of white balsamic vinegar

Mix together.

Season with salt and pepper, if desired, but I have a better option for you. I finally bought Eden Organics Seaweed Gomasio (recommend by my pal over at Absolutely Ayurveda), which is a great alternative to straight salt, and also picked up some hemp seeds. Both were perfect sprinkled on top.
