Happy Monday! After another couple days of rest, and lots of get-better food (including this smoothie, and the “healing stew” from Friday Five…Mike did make it for me, whata guy!), I am back in action. And thank goodness for that. I am not a person who is good at “taking it easy.” Not only did I miss exercise like crazy (and actually only ended up taking one real rest day from it because I make dumb decisions), but just being on the couch for two entire days made me feel like I was going out of my mind! There is only so much bad TV a gal can watch! (On that note, “Something Borrowed” is perhaps one of the worst films ever made).
Anyway, as you can imagine, I was doing everything in my power to speed along the recovery process. And since I’ve known since I was young that Vitamin C is a cold-busting ninja, I decided to create a smoothie made from fresh grapefruit juice.
After juicing my grapefruit, I considered how I could make this immunity-boosting powerhouse soothing to my throat, and knew I needed to do something to make it “creamy.” As any vegan smoothie-lover knows, just go to your old friends, the frozen banana and almond milk. I then threw in some frozen peaches and just under a scoop of vanilla protein powder.
Cold-busting Grapefruit Smoothie
juice from 1/2 grapefruit (or orange)
1/4 c unsweetened vanilla almond milk
5 frozen peach slices (or mango slices)
1/2 frozen banana
1 scoop protein powder
1-2 ice cubes
Put everything in your blender. Blend.
I swear I felt immediately better. You’ll notice that there are some options to switch up the recipe, including using oranges instead of grapefruit and mango instead of peaches. If you’re not into that bitter taste of grapefruits, I’d use orange juice, or add some stevia if that’s your thing. I tried the smoothie with both peaches and mangos, and both were winners.
It’s a tangy ninja kick to colds, and a satisfying creamy smoothie even if you’re not sick.
