Happy Monday, readers! I hope you had a good weekend. My weekend was filled with a game night with friends, a movie-night with friends (well, not really a movie night, actually an “L Word” night. so bad, but so good!), an out-of-town friend visit, and some pretty indulgent eats. On Friday, I had some delicious, but sugary vegan cookies a friend made, and on Saturday, two of my friends who just got back from a vegan baking bootcamp workshop in NYC wanted to show off their new skills, so I happily partook in some of their sweet treats. Although they used Sucanat instead of sugar, it was still a lot on my belly, and I kind of had a stomach ache the whole weekend.
Fortunately, it’s a new week and a fresh start, and I’m excited to have a meal plan for good, clean eats. This recipe for a quinoa and veggies is delightfully rich and full of zesty flavor combinations. It’s another recipe that you could play around with depending on your spice preference and depending on what veggies you have on hand. I highly recommend sticking with the beets though, because they turn your bowl an adorable shade of pink! :)
Creamy Tahini Quinoa with Beets & Greens
1 c quinoa, rinsed
2 T tahini
1 t cumin
1/2 t cayenne
1/4 t sea salt
1 T olive oil (or water)
1/2 can beets, chopped
2 c baby greens
3/4 c frozen peas
1/2 lemon (juice)
Rinse your quinoa and cook it by adding it to 2 cups boiling water, then simmering for 15-20 minutes. Add your greens and peas into your hot pot, so they start to wilt and defrost. Add your tahini, spices, lemon juice, and olive oil or water (the point of this is to make the tahini easier to mix, so if you’re avoiding oils and fats, use water, it will just give it a less rich flavor). Mix around until your quinoa is covered with the tahini and spices. Add your beets and mix them in.
