Happy Monday, readers! I’m on day 17 of the cleanse, and am officially announcing that I’ll be ending about a day and a half before the 21 days is up. But you’ll be so close! Don’t stop now! I can hear you urging…But it’s less about lack of willpower, and more about knowing that my body will need more than a day to fully adjust back in to eating solid foods at night, which I am definitely going to be doing on Saturday for my birthday party! My actual bday is on Tuesday–I TA until 9pm, so I absolutely want to stick to a liquid meal that night. Mike is going to pick me up from class and bring me a smoothie from a great raw/vegan restaurant called Ecopolitan. But I decided that on Wednesday I’d start adding solid food back into my diet at night by eating a non-pureed soup (probably a chickpea miso veggie soup). That way, Thursday and Friday, I’ll still eat mostly clean, but without following the liquid/solid/liquid plan so closely.
So, the title of this post is implies a birthday celebration already took place…but my actual bday is Tuesday…but I have a party on Saturday? Yes, yes, and yes. I’ve been inspired by a good friend to have “birthday week” rather than simply one day. And so to commence “birthday week,” I hosted a clean brunch for three of pals. I made a grain & berry medley and apple & red cabbage salad. Kaitlyn brought dates balls that I could eat, and also provided breakfast bakery for the non-cleansers (this included a vegan, gluten-free muffin that is sitting in my freezer for sometime next week!), and Dana brought her world-famous carrot cake cookies (I have yet to break vegan for these, but one day…one day!).
The grain & berry medley was very easy, and satisfied my craving for the oatmeal I’ve been missing while on the cleanse.
Grain & Berry Medley
1 c millet
1/2 c quinoa
3 c almond milk (+more if needed)
1 packet stevia
4 dates, chopped
1 tsp allspice
frozen and/or fresh berries
Put your millet and quinoa in a large pot with the almond milk. Add your spices and stevia. Bring to a boil, stir, then reduce to simmer. As the grains start to absorb the liquid, stir in your dates and berries. If it looks like there’s not enough liquid, add more! Serve with more berries!
I also made a quick and simple red cabbage & apple salad, with very few ingredients.
Red Cabbage & Apple Salad
1/4 head red cabbage
1 granny smith apple
1 red apple (I used Gala)
1/3 c pecans, chopped
juice from 1/2 lemon
Chop your cabbage and apples into bite size pieces. Put into a large bowl and squeeze 1/2 a lemon over the salad. Mix around. Add your pecans and mix some more.
It sounds too easy to be falvorful, but those fresh fruits and veggies pack a taste-punch right in your pie hole. In a good way.
