Cleanse Day 4. Peach Cobbler Smoothie. (+a love affair w/ collard greens)

Good morning! Ready for another report back? I had a great day of eating yesterday. I get so much more creative with healthy foods when I’m on the cleanse. I put all the energy I usually put more into making desserts into making meals, which pays off big time. It always inspires me to buy veggies I don’t usually buy, and this time that veggie was collard greens! I always love collard greens when I eat them, but I never actually prepared them myself. THEY ARE BLOW-YOUR-MIND DELICIOUS! Dare I say they are rivaling kale for favorite dark leafy green? (Shh! Don’t tell kale!).

I also had one of my FAVORITE smoothies yesterday morning; the “peach cobbler smoothie.”  I wanted something hearty since, if you remember, I was super hungry.

I got a version of this recipe from the CLEAN community forums, but this is how I ended up making mine.

Peach Cobbler Smoothie

*handful of frozen peaches

*about 3/4 c vanilla almond milk (unsweetened)

*1 scoop Garden of Life RAW Protein Powder

*little under 1/4 c pecans

*dash of vanilla extract

*pinch of stevia (optional)

*cinnamon (LOTS)

Put in your blender and blend until smooth. It seriously tastes like peach cobbler ice cream. Mind-bogglingly delicious.

"I'm ready for my close up"

I stupidly did some interval training after eating this, because I felt so pumped up from my hearty breakfast. I swear I’m only doing yoga today! Anyway, my workout meant, once again, that I was quite hungry for lunch. Good thing, because lunch was DELICIOUS! I cut up a spaghetti squash into quarters and placed it in a 425 degree oven. I cooked it for about 40 minutes. I put drained, rinsed and dried white beans on a baking sheet, dashed them with some salt and pepper, and added them to the oven for about 20 minutes. I then steamed a mix of collared greens and spinach.

All I did to season everything was drizzle the plate with a little EVOO and salt and pepper.

Fuck that’s good!”

This is what I literally exclaimed out-loud, to no one (well, except my cat), after biting into this dish. I know I said I’d watch my mouth on this thing, but you have to know how intensely delicious this ridiculously easy meal was. The greens taste SO fresh, and topped with the crunchy white beans, it’s an unstoppable combo. The spaghetti squash also tastes almost too good to be true. Fresh and hearty, and may have stolen first place in my heart for favorite winter squash. And did you know that an entire spaghetti squash only has 165 calories? So 1/4 of that is only about 40. You’d never know that based on it’s rich and delectable flavor.

I am soo glad I have leftovers for today. I’ve been dreaming about it since finishing.

I had my snack too late again. An apple with almond butter at about 5pm. I was working all day at a coffee shop, so I didn’t have access to food until I left. This meant, once again, I wasn’t super hungry for dinner.

However, in order not to have a juice-for-dinner repeat, I mashed up 1/2 an avocado in a sort of creamy “cold avocado soup”? Kind of? Regardless it was “liquid” enough to past the Clean test, and also full of healthy, filling fat. Bueno.

Okay, off to yoga!
