Easy Butternut Squash Soup

Hello! I got a lot of positive feedback on the 5-ingredient Pumpkin Soup recipe I posted last month, and so I wanted to give another variation on a similar theme. Although I added more than five ingredients to this soup, it’d be easy to eliminate (or add) whatever you didn’t have on hand. This is what I had handy in the kitchen:


1 can organic butternut squash

1/2 c frozen green peas

3/4 c plain almond milk

1 T olive oil (optional)

Spices (as much as you like): ginger, cayenne, cinnamon, salt

1 T maple syrup (not pictured/optional)

Directions: Put everything in a medium pot over medium heat. Stir regularly. Serve.

This is easy, fast, yummy and healthy. My favorite kind of weekday recipe! Mike thinks my love of frozen peas is weird–I add them to almost anything–but I like having at least one green veggie in almost every meal, and peas are so cute and tasty!

In other news, I decided to do another mini-detox after all that Halloween indulging. I’m doing a mix of Kris Carr’s “Crazy Sexy Diet,” Dr. J’s CLEAN, with some tips from ayruveda (inspired by the lovely Absolutely Ayruveda <3!). Basically, this week is no sugar, no desserts, no soy or gluten (which I almost never eat anyway, but esp. not this week), and trying to do the liquid/solid/liquid meal plan again. I just wanted about five days of clean eating to recharge. I really love being part of these cleanse programs that focus on eating ‘clean’ as opposed to eating to lose weight, like the other “detox” programs I used to try (cayenne/water/maple syrup diet, anyone?). I could never stick to those things because they were not only restrictive, but my mental approach to them was totally backwards. Detoxing to *feel* better as opposed to *look* better is a much healthier approach, and none of these programs deny me of anything my body needs. Hooray!

Anyway, maybe I’ll get a couple more liquid recipes up this week. Otherwise, this month I want to try to feature Thanksgiving-appropriate vegan/gluten-free/sugar-free/clean side dishes and desserts!

    I have got to try butternut squash. I’ve had spaghetti squash and zucchini, but never butternut squash. I love how you use almond milk and quinoa! I have had quinoa a couple times — I really need to start using it more. I guess I love my oatmeal in the morning too much. :)
