Mmm, nothing like the taste of fresh baked banana walnut bread….Except for all the sugar, eggs and gluten that usually accompany such an indulgence, right? I don’t know how this little creation first came to me exactly, but I remember having a vision….I had a tupperware container full of breakfast millet that I had cooked in almond milk and doused with a bit of cinammon, vanilla and stevia, and I wanted to spruce it up. I also had a bunch of super-ripe frozen bananas that were begging to be used. When I got my first delivery from Nuts Online (I really recommend this place….Great customer service and the best variety of decently priced healthy-foodie gems!), which included walnuts, it all came together……..
“I’m going to make a walnut banana ‘bread’ parfait,” I told Mike sort of randomly and out of the blue, which is how a lot of my food conversations happen (because, like, I’m thinking about it in my head, so it makes sense to me to bring it up, even if we’re in the middle of reading about historical risings of the proletariat. what?)
“Sounds good,” he says in that way I’m getting accustomed to….the “i care about this because i love you, but really, otherwise, i wouldn’t give a darn about some weird vegan/glutenfree/sugarfree food blog creation.” It’s endearing.
So the next morning, I went to work. First, I got out my prepared millet. If you don’t already have millet prepared….prepare it! Add cinnamon and vanilla.
Next, I made a version of “banana softserve.” You can read the original recipe here; note that I add a dash of vanilla and a bit of almond milk. After it was blended, I scooped it out of the food processor and set it aside. Rinse out the food processor to prepare for walnut butter-ing!
This was my first bout with a sweetened nut butter, and wow, do I get why so many bloggers love this! I simply put 1 cup walnuts in the food process with about a 1/2 tsp of agave, about 1/2 tsp of vanilla, and 1 tsp cinnamon. Blend it until it’s creamy. Soooo delicious! Dangerously delicious.
Now the fun part: layering! Do any combo you like because it will be best all mixed together in the end. But for the sake of aesthetics, put a serving of each (the smallest portion being the walnut butter). Admire. Snap a photo if you feel inclined (it’s fun, I promise). Then, mix it all together and you will feel like you’re eating banana walnut bread…ice cream! That frozen banana really packs a flavor punch. Mmmmm. Enjoy!

1 tsp cinnamon
1/2 tsp agave
1/2 tsp vanilla
unsweetened coconut for garnish
