Happy Monday, readers! I hope you had a beautiful weekend. I had a really really beautiful weekend….One of those weekends that you know you’ll be nostalgic for in the future. I really love that. <3
This dressing is also pretty beautiful. The picture doesn’t do it justice—if I had a fancy camera and fancy lights you could see better that this is the most brilliant shade of green!
It’s also incredibly tasty, nutritious, and easy. I used it as a salad dressing, but if you decide to add the avocado this could really be a guacamole-like dip. It is chock-full of cilantro, which is such an amazing herb. Not only is it full of minerals like potassium, calcium, manganese, iron, and magnesium [1], but it also pulls heavy metals from the body [2].
Creamy Cilantro Zucchini Dressing
1 heaping cup cilantro chopped
1 date
juice from one small lime
1 small zucchini
1/4 avocado (optional)
optional spices (to taste): turmeric, red pepper flakes
water (to desired consistency)
Blend all ingredients except water into a high speed blender. Blend, add water until you achieve desired consistency.
Serve on top of greens, or eat as a dip with your favorite crudites.
Delicious.

Looks perfect. I love cilantro, and have never thought to add zucchini to a dressing/sauce. Very creative.

The zucchini is great for giving dressings a creamy consistency without any fat!
